Party Chicken Salad

I'm always looking for the best chicken salad sandwich.  If I see it on a menu, I'm going to order it.  There are a couple places I would highly recommend for their chicken salad (a post for another time), but I wanted to share the best homemade version that you can make for yourself.  A dear friend and mentor that I've known for 20 years gave me this recipe one year after she made it as a birthday meal for me.  I'm going to share the full recipe that will make about 12 sandwiches.  I usually cut the recipe in half and I highly recommend that if you're only making it for one or two people.  The absolute best way to eat it (in my opinion) is to put it on Pepperidge Farm's Homestyle Oat bread.  The blend of flavors of the bread and the chicken salad are a perfect combination.  Also, I chop all the ingredients into small pieces and use red seedless grapes.  The beauty of this recipe is that you can prepare it however you like best and it will taste the same regardless.  Enjoy!

Banana Pudding

Looking for a dessert for your Memorial Day gathering? Here's a recipe for those warm weather months when you need something cold and delicious that is sure to be a crowd pleaser.  I first came across this recipe while attending the 155th anniversary reenactments at Shiloh battlefield in Tennessee in 2017.  I had just finished my comprehensive exams before graduating from graduate school, so my husband and I rented a room at a bed and breakfast (https://www.pillowstreetbnb.com/) out of town for the weekend to celebrate.  We ended up being the only people staying that weekend and the owner took great care of us.  She even fixed us breakfast each morning and dinner one night.  She served the best banana pudding with dinner and I knew I just had to have the recipe.  She was kind enough to share it with me and it has been a favorite of friends and family ever since.  Get out your recipe cards and a pen, you'll want to write this one down.

Nectar Cake

This dessert is perfect for those warm summer nights when you want something sweet and citric.  The recipe comes from my boss's grandmother, Ms. Finley.  I got to try a slice of her apricot version and fell in love.  When I got the recipe, my boss mentioned that it could also be made with peach nectar if I didn't want to use apricot.  I was immediately sold!  I highly recommend trying the peach version, it's my favorite. This cake is one of those desserts that makes you crave it again as soon as you finish the last slice.  It's moist and light with a sweet drizzle poured over the top.  Whether you're a lover of apricots or peaches, I think you'll discover that this is a recipe that you'll want to make time and time again.  Enjoy!

Chocolate Gravy

In the South, we're known for our large breakfasts with biscuits and gravy.  However, have you ever heard of chocolate gravy?  Biscuits are still required for this recipe, but the gravy is a little different than the traditional sausage gravy you'll find in most recipes.  Few restaurants offer this sweet treat, but it's most often served at breakfast time with traditional breakfast foods such as eggs, bacon, etc.  If you're not familiar with chocolate gravy, definitely give it a try.  It's typically found in the South, where you'll find the best biscuits to pair it with!
